On the Menu Monday

Morning y’all and welcome back for another On the Menu Monday, but this time I’m sharing it with y’all on a Tuesday! We had a long weekend in Canada, so Keenan was off of work yesterday. So yesterday (Monday) felt more like a Sunday, and today now feels more like a Monday rather than a Tuesday. Betcha didn’t need me to explain that one to ya though, did you? We had some lovely family time and got to relax a bit, which was much, much needed. Anywho, on to this week’s menu!

 

Weekly Meal Plan Menu (21)

 

As you might notice, a lot of the meals I had listed for last week are listed again for this week. Wellllll life happens (the turkey wasn’t thawed in time, we had company over for a hockey game, we were lazy and ordered from Skip the Dishes, the cauliflower was bad, blah, blah, blah). So needless to say, here we are cooking several of the recipes we had planned for last week, but doin’ it this week.

I roasted the turkey last night (Monday night), but we haven’t eaten it yet. This is because I forgot how long a turkey takes to cook and we did not wanna eat at like 9 o’clock last night. Can you blame us? So I’ll be making the roasted veggies to go with the turkey for tonight’s dinner, and I’ll make some turkey salad for lunches this week instead of for dinner.

We are making a miso soba noodle soup following a recipe from *It All Beings with Food (US link here). We made this meal about once a week back in January and February, but haven’t really made it since. I am eager to try it out again as it’s super yummy.

This week is a busy week in the kitchen for me, mainly because I have a lot of food to make for Andee. But I might try to go ahead and chop up all our veggies for the week during the day while I am prepping Andee’s food. This makes dinner much easier each night and I only have to pull out the cutting board once. Remember I’m all for the simple clean up and that easy livin’! Know what I’m sayin’?

  1. The turkey and turkey salad sound delicious. I tend to never think of cooking a turkey except at Thanksgiving. I need to change that. No new recipes this week just recreating some old favorites. I need to try some of your menu ideas. As always, love your posts!
